Throughout the Caribbean there are black rum cakes, fruited and soaked with Madeira, sherry and cognac or whisky. In Bermuda, we bake with Gosling’s Bermuda Black Seal Rum, to produce a well-received special brand of Traditional Bermuda Rum Cake. Since 1806 Goslings has blended this superb Island rum in Bermuda and this continues to be the internationally award winning Black Seal Rum.
We believe that the forerunner of the celebrated Rum Cake may have begun as plain hard sea biscuits dunked in the daily Naval Regulation “tot” of black rum. Other rumors contribute its development to the heavy fruited very dark rum cakes of the Caribbean which began life as a steamed pudding.
